Chickpea patties instructions
- Preheat oven to 400°F.
- Mash up chickpeas in a large bowl.
- Shred carrots and onion and add to bowl.
- Add the rest of the ingredients and stir well.
- Form into large patties.
- Add to greased cookie sheet.
- Bake for 30 minutes.
- Broil until golden in color.
In a food processor, whizz the chickpeas, lemon zest, lemon juice, cumin, half the coriander, the egg and some seasoning. Heat the oil in a frying pan until hot.
